Raw Vegan Spinach Dip

If you cannot find jicama, you can use water chesnuts

Yields: 
8 people
Ingredients: 

1 cup macadamia nuts
1 T *Organic Nama Shoyu
1 T extra virgin olive oil
4 T lemon juice
1 T coconut nectar
1-2 garlic cloves
water as necessary

4-6 Scallions chopped
2 Cups of **spinach chopped
1/3 cup chopped jicama

Directions: 
  1. Place first 6 ingredients in a blender or food processor until smooth adding water as necessary.
  2. Place mixture in a bowl and stir in scallions, spinach and jicama
  3. Adjust taste to your liking (salt and lemon to make more sour)

Chill for 2 hours and serve with vegetables or crackers.

Notes: 

*Nama Shoyu is an unpasteurized soy sauce so has living enzymes that are beneficial.  You can substitute tamari or soy sauce but always get organic or you will get a GMO product.

** Spinach is one of the “Dirty Dozen” or the most contaminated produce with pesticides. I recommend always buying Organic when you can.
