1 T extra virgin olive oil
4 T lemon juice

2 Cups of **spinach chopped
1/3 cup chopped jicama
- Place first 6 ingredients in a blender or food processor until smooth adding water as necessary.
- Place mixture in a bowl and stir in scallions, spinach and jicama

*Nama Shoyu is an unpasteurized soy sauce so has living enzymes that are beneficial. You can substitute tamari or soy sauce but always get organic or you will get a GMO product.
** Spinach is one of the “Dirty Dozen” or the most contaminated produce with pesticides. I recommend always buying Organic when you can.
